As someone who has had a relative murdered with this procedure, not next of kin so couldn't do anything to stop it, I can confirm the condemned are indeed allowed to die of dehydration & hunger.
Not only that though they're put into a drug induced coma to stop them saying anything to anyone.

It was devised by the Royal Liverpool University Hospital and the Marie Curie
Hospice in Liverpool in the late 1990s and is now recognised as a best practice model
by the Department of Health. Dr Kevin Fong asks why it has recently been criticised
by bereaved families and some of the press. Is it because some medical staff are
administering it in a callous way or is it because the families of people who are
terminally ill are not informed of what happens on the Pathway?
